Afternoon Coffee and Madeleines


This was my first attempt at making madeleines and they turned out pretty well.  And the great thing is you can make them with items you probably have on hand!

I found this recipe on Allrecipes.com.  I love looking up recipes online because you can read other peoples' comments on different things they had trouble with or ways they changed the recipe to make it even better!

 

Here is the recipe for the madeleines: 

1. Preheat the oven to 375 F.

2. Butter and flour two madeleine pans (12 cookies for each pan).  I only have one pan and it worked fine, but it would have been better to have two because the batter really changed consistency while waiting for the first batch to bake.

3. Using your stand mixer, beat together 2 eggs, 1/2 teaspoon of vanilla and 1/2 teaspoon of fresh lemon zest.  Beat on high for 5 minutes, this is where it comes in handy to have a stand mixer!  I was able to run downstairs and throw in a load of wash while mixing my batter!

4. Turn the speed to low and slowly mix in 1 cup of powdered sugar.  Beat on high for another 7 minutes, until thick and glossy.

5. Melt 1/2 cup of butter and set aside to cool.  I didn't have a full stick of unsalted butter, so I used 1/2 stick of regular butter and 1/2 stick of unsalted butter.  Because there is no addition of salt to this recipe, it turned out great!

5. Mix together 3/4 cup of flour and 1/4 teaspoon of baking powder.

6. Take the bowl off the stand mixer and slowly fold in the flour mixture.

7. Gently fold in the melted, cooled butter.

8. Spoon mixture into the prepared pans, about 3/4 full. 

9. Bake for 10-12 minutes.

10. Let the cookies cool in the pans for a couple minutes and then loosen with a knife.  Flip the pan over to get the cookies out.

11. After they have cooled you can dip them in melted chocolate, but I love them plain!

Madeleines are best eaten the day you make them and even better just out of the oven! 

Pantry Items: 
-Butter (1 stick plus more for the pans)
-Flour
-Baking Powder
-Eggs
-Powdered Sugar
-Vanilla
-Lemon (1 for the zest)
-Chocolate (if you'd like to dip the cookies)
